Rabbit Hunt – Dummer New Hampshire

Northern New Hampshire has a healthy population of snowshoe rabbits. During the winter months the normally brown rabbit turns almost completely white. I sent a day out in Dummer with three guys and three dogs trying to harvest a few of these elusive rabbits. It took every once of energy the dogs and guys had to get one. It’s truly remarkable how well adapted the rabbits are to dealing with deep snow. Throughout the day the dogs tracked a multitude of rabbits, barking, baying and sniffing, all day long these short legged little dogs broke through the snow, climbed under hemlocks, in and out of bushes so thick I couldn’t even see the dogs. In the end we brought home one rabbit, free from antibiotics, growth hormones, or any other unknown process, which will be the featured ingredient in a stew perhaps.
